so it bloomed, -it was wonderful! now the stem section
has gone yellow, as has the enclosure it emerged from.
do I cut it somewhere now, -and where?

Cut nowhere ! Wait and see if it is going to give you a new pseudobulb, that's what usually happens; also usually after flowering Catleyas, the stem go yellow and sometimes one of the pseudobubs as well and it become wrinkled-up, then you see new growth.
Just be patient.

You can go ahead and cut the stem section that held the flowers and emerged from the pseudobulb if the flowers have died. That's what I do. I think Christina thought you meant cutting the whole pseudobulb off, which of course, you should NOT do.
