The main thing is to use gloves. Quite often, chefs refer to the experience of European colleagues that in some establishments this is not required, and so on, but if you look, there are generally stricter sanitation requirements than ours, and the level of sanitary literacy is higher. In my experience, if you don't give a person strict requirements, then it turns out the way we all know. Gloves are a mandatory attribute according to the brand standards and are necessary in order to avoid cross-contamination due to the contact of the bare hands of the restaurant staff with ingredients and prepared dishes.
