I never had so many large red peppers like this year. My 2015 Red Marconi plants didn't die in the winter and they are producing these larger, thicker red peppers.
I used this fantastic recipe to preserve them. They don't need to be water bath or sealed. They will keep in the fridge for one year. Enjoy:
