The first week I put out my cauliflower and kohlrabi seedlings, I had something come through and take a bite. I had cayenne pepper on the foliage though, so it didn't destroy everything or come back. Four of the plants were chomped up pretty badly to the point where I couldn't even tell if they were cauliflower or kohlrabi anymore, but I left them in the soil to see what would happen. Two of the chomped up plants - one with even less leaves left on it than this one - have started "resprouting" in an odd way. It's almost like the root system started sending up new plants - some where the original was, and some up to several inches away. I can't find anything about this through my internet searching - has anyone ever seen this before?

yes, it is normal.
If the plant has good weather condition it will keep sending out sprouts.
You could use the baby leaves in your salad.
