Fresh Guacamole

Ozark, MO(Zone 6a)

An Aldi's discount supermarket in our nearest big city is running a loss-leader ad, "Avocados 29 cents each!", and I got our local WalMart Supercenter to match the price. So, on this snowy day, I made what turned out to be my best batch of fresh guacamole ever:

15 avocados - peeled, pitted, and mashed
1 cup lime juice
3 teaspoons salt
2 large sweet onions, chopped
1/3 of a supermarket bunch fresh cilantro, chopped
7 Roma plum tomatoes, diced
2 teaspoons minced garlic
3 very hot little Maui Purple Peppers, dry and crushed, including seeds

Our family enjoyed a whole bunch of this fresh and froze the rest in 1 1/2 lb. packages in FoodSaver bags. Guacamole freezes real well, and the lime juice keeps it from turning brown.
