New Kiln Owner with many questions

hey everyone. I own an art school in New Jersey. We've recently purchased 2 Blue Diamond TM-18 Kilns (electric) and have a few questions about them.

We want to be able to offer classes in ceramics where students can sculpt and create things that can be washed/eaten from.

What type of clay and glaze will we need?

I believe the "max" temp on the kiln is 2300 degrees.
Trouble has been that Blue Diamond is no longer in business, and it's hard to get information about these kilns! Thank you.
