I got some rooted pieces of Dieffenbachia, but they are very leggy. If I cut the top off, will new leaves form on the cane?

They should do. I had a palm frond fall on one of mine and broke the top off. Just put the top in the soil next to the 'parent' plant and they're both growing well.
