ways to preserve Krimzon Lee Peppers

Berkeley, CA(Zone 9a)

I am finally getting a nice pepper crop. I planted some Krimzon Lee Peppers that are now green, but should eventually turn red. I have a fancy Mexican dinner to prepare in Mid October. How do I preserve them (freezing, blanching or other) so that I can use them in recipes. I'd like them to remain crisp.
