Everyone may already know about this site but thought I'd post it, just in case. If you go to http://nchfp.uga.edu/ (the site of the National Center for Food Preservation) you can find lots of great information about canning, drying, freezing and pickling foods. There's also a free online course you can take that will cover all those things.
