Dehydrate Sprouting Garlic

I have some Music hardneck bulbs stored overwinter that are beginning to sprout. Any chance I can dehydrate them now for use as powder in soups? If so, how should I proceed? I have a 9-tray Sedona I used once last year to dry cherries. Would I crush them up into powder after dehydration, and how should I store the result.
