What to do w/a Pepper Roaster

Okay....I got this really cool pepper roaster for X-mas. I've seen them in New Mexico where they had them outside of grocery stores. They'd roast the peppers up in a metal mesh barrel that looked like something you'd use to play bingo with except that the propane torches on the bottom kinda burn the skin off the peppers ar the barrel is turned.

No doubt, this is the most useful appliance EVER but I can't figure out what to do w/more than several roasted peppers at a time and this puppy hold quite a few pounds of them at once. Can anyone please recommend some way that I might get a bit more utility out of this?

For instance, what does one do w/a lot of roasted peppers all at once?!?
