I need to know when I should prune, one needs to be cut back a good bit, my Japanese Maples, I think they are acer palmatum?

Oh Wow Mary, you don't say where you are or anything. You need to talk to someone locally about them. If it were us, up here in the frozen North, would be a whole different ball game. :0)
