Just two of us here so I frequently have partial peppers left over, especially if I'm using multiple colors (salads, stir fry, etc). I often vacuum pack the leftovers and freeze them but while the taste/flavor remains, the texture is nasty after thawing. Have also used a dehydrator but not fond of the method plus if you don't take them out at exactly the right time, they turn into little flavored rocks that are very hard to rehydrate.
Better ideas would be appreciated. At store prices, I hate to waste anything I don't have to... Thanks
