I have a pot of salt-free chili I'm making for someone
with heart problems. I used my garden tomatoes, onion
and peppers. I've added smoked paprika, pepper, cumin,
oregano and cayenne pepper. Its still a little light and sweet.
I tried adding some wine - that helped.
But I'm looking for something to add depth. Ideas?

PS: I also added a little fish sauce
