Arugula

Anyone here have any suggestions for its use besides in salad?
I do love the stuff, but I can only get it in those plastic boxes, (5 oz) and all too often,
much of it spoils before I can eat enough salad to use it all up.
That maybe doesn't sound like a lot, but it's quite a bit for one person to use up quickly.

I'm thinking of trying some Arugula 'chips' (like kale chips).
Has anyone here tried that?
Any other interesting (and good) ways to use it?
