Do any of y’all process your own pork sausage? If yes what brand seasoning do you prefer, or family mix–if you’ll share the makins?
Do you grind?
I usually make my own sausage, pork or venison/pork mix. My seasonings always vary so no specific recipe. The sausage with venison always includes some crushed juniper berries.
Do you gather the berries?
Nope, they are not prolific here so I buy them from Penzey's and grind them as I need some.
I also add a few grinds to the seasonings when I cure my own bacon.
