Winter squash - more ideas needed

Madison, AL(Zone 7b)

I have been blessed with a plethora of squash this year. The butternuts I just store as-is and eat them until spring but this year I have some monster large cheese types that will need processing whether I store them or not.

So far I am planning:
Frozen cooked squash, mashed.
Fruit leather - pumpkin pie and pumpkin butter flavored
Dehydrated strips for dog treats and soups

Now I'm stuck.

I don't think I want to attempt to peel and cube them for canning; that's a bear of a job on a large scale, and I can't handle it right now.

Any other ideas for putting up some winter squash?
