I like them all but I really like the Waterlilly type.
There is a great Dahlia nursery Halls of Heddon here in the UK and their standards are excellent.
Baa I get from them every year. I only buy 'Bishop of Llandaff'

Mark why only the Bishop? Its a great plant I know but they have so many! I try and get a couple of different ones every 3 years or so, David Howard and Noreen are high on my list.
