Making tiles for kitchen countertop

I would like to make tiles for my kitchen countertop - specifically surrounding the sink. What is the best tile for this wet, dirty area? I would like to hit the "impervious" rating for the "ANSI test for resistance to water penetration." Does mid-range firing get "impervious" tile? Or must it be high fired? I am an experienced potter but have never done a job like this. Anyone have any experience? Thank you -
