What are these fabrics? Shirting and Minsky?

I have been seeing listings for Minsky or Minky and Shirting fabric, but not sure what these are as I haven't seen them in person. They are oft advertised for quilting, but not sure how they fit in between the 100% cotton and flannel genres. Also, does 'cotton blend' shirting fabric work for quilting?
