I'll kick off our next installment with my embarrassingly easy rendition of Pasta e Fagioli, which we had last night.
Pasta e Fagioli (Pasta and Beans) Soup
1 pounds hamburger
1 onion, diced
1-2 tablespoons garlic, minced (or 2 cloves, minced)
2 ribs celery, sliced
1-2 cups chicken broth or water (may need 3 cups if it seems too thick)
1 cup julienned carrots (I cheat and buy them bagged)
1 jar mushroom & green pepper spaghetti sauce
1 can Rotel tomatoes
1 can cannellini or great northern beans, drained
1 can kidney beans, drained
1 cup ditalini or other small tube pasta, cooked and drained
In a Dutch oven or stockpot, brown hamburger with onion; add garlic in the last few minutes. Drain well. Add all other ingredients; bring to boil then reduce heat and simmer until veggies are tender. Just before serving, add cooked pasta. Serve with grated parmesan cheese.
Serves 4-6. I also make this in the crockpot - just brown the hamburger and onion, then put everything in the slow cooker on high for 3 hours or low for 6.
