Questions re: FMQ/Meandering

I have made a table topper in order to try free motion quilting/meandering stitch. I have some questions: 1) do I still start at the center and work my way out 2) do I work in quadrants and 3) should I first SID the center seams to help hold things together? Thank you for any help you can offer.
