What kind of comfort foods do we enjoy for the winter?
What's on the menu for 2011?
I found that pic....reminds me of meals my mom used to make...anyone have or had those pie irons?
http://www.pieiron.com/what.htm
We had round ones, though and my mom made the BEST grilled cheese sandwiches.
Jen what is spaghetti pie?
Louise what are skinny rolls?
Spaghetti pie is a twist on lasagna or ziti. spaghetti is mixed with parm cheese and 1 Tbls butter and an egg and used as the "crust" for the pie(spread evenly & up the sides of a pie plate), then ricotta mixed with 1 egg layered on top of the spaghetti then browned ground beef or sausage with onion and green pepper(if you want) and that gets spooned on top. Bake 350 for 20mins then put on shredded mozzarella, cook for another 5 mins, let sit 5 mins and it's ready to be sliced.
Thanks Jen that sounds oh so YUMMY!!!
Might have to try spaghetti pie with tonights dinner....making eggplant parm...that would go good with it!

I couldn't spell spaghetti to save my life..... still doesn't look right!
Just type it as pasta! LOL
I have a bean and ham soup in the slow cooker. Pinto beans I soaked overnight, sauted onions and garlic, Indian masala spice. Worcestershire sauce, the ham bone and diced ham. Should be ready about 4:00 pm today. Already smells great.
DH made steak with mushrooms, broccoli and rice last night.
Measurements on the cheeses...
parm:1/3 cup
ricotta:1 cup
Mozz: 1/2 cup
oh yeah and after you brown and drain beef/onion mix with 3/4 cup spaghetti sauce
Why don't any of you live close to me? After subbing in the first grade today (and tomorrow if it doesn't snow) all I can manage is leftovers......
We'd be in big trouble if we all lived near each other!!!!
That's for sure, but what fun it would be!

I think I will be doing baked boneless/skinless chicken thighs with some type of vegetable side dish.
As a family we have started the South Beach Diet this past Monday. That involves lean meats, vegetables, some diary, and lower amounts of carbohydrates. So far I've lost about 9 pounds so I think it is working.
Hope you are all having a blessed and sumptuous Sunday.
Good for you, Dave! In the winter, carbs are hard to give up! Roasted & stuffed a chicken today served with whipped sweet potatoes & peas......Pixie, where did you put everything???
