I found that pic....reminds me of meals my mom used to make...anyone have or had those pie irons?

We had round ones, though and my mom made the BEST grilled cheese sandwiches.

Jen what is spaghetti pie?
Louise what are skinny rolls?

central, NJ(Zone 6b)

Spaghetti pie is a twist on lasagna or ziti. spaghetti is mixed with parm cheese and 1 Tbls butter and an egg and used as the "crust" for the pie(spread evenly & up the sides of a pie plate), then ricotta mixed with 1 egg layered on top of the spaghetti then browned ground beef or sausage with onion and green pepper(if you want) and that gets spooned on top. Bake 350 for 20mins then put on shredded mozzarella, cook for another 5 mins, let sit 5 mins and it's ready to be sliced.

Thanks Jen that sounds oh so YUMMY!!!

I think I will be doing baked boneless/skinless chicken thighs with some type of vegetable side dish.

As a family we have started the South Beach Diet this past Monday. That involves lean meats, vegetables, some diary, and lower amounts of carbohydrates. So far I've lost about 9 pounds so I think it is working.

Hope you are all having a blessed and sumptuous Sunday.
