I took this late in the evening, so the sun was at a weird angle. The colour normally looks like your picture

That is odd. It looks like mine this year, Amaranthus 'Fat Spike'. The first time I grew 'Fat Spike', it was about 2' (24") tall, which I thought was as described. This year, I don't know what's the difference, but it's over my head, so has to be at least 6'.
