So I bought some amaranth .... what do I do with it now???

Ferndale, AR(Zone 7b)

The information at the health food store says it's an ancient South American grain - high in fiber, low in sugar, sticky (but should not be gummy) with a nutty flavor. Searching the internet, I found it makes a good breakfast - cook like grits, then add raisins, nuts, etc.

I've only been on this new eating program for 2 1/2 weeks but have had fun learning to enjoy new foods and am feeling better already. Who is familiar with amaranth? What are your favorite ways to use it?
