I will be cooking 2 rib roasts. I do not have the big wooden carving boards. So I am thinking of placing a new clean piece of wood in the bottom of 2, large as I can find, disposable aluminim pans. Then placing a cooked roast in ea. one to cut. What do you use? I will use an electric knife as Alton Brown suggests; or some of us refer to as AB!! :)
