I left my shallots in the ground too long and now they are sprouting again. I planted them last fall. What should I do?

Sorry - no experience with them.
I've been through this - I left mine in the ground over the winter, but mulched them a bit for protection (we don't get reliable snowfall here, so extra insulation is good). In the Spring I puled back the mulch & let them grow; I believe I harvested earlier than normal that year.
