I had to resurface an area where my japanese hydrangea was growing. What happens with their aerial roots? Do they grow new ones? Should I tie it up against the wood and hope it reattaches? Or am I looking at tying it and waiting for new growth?

The old roots will wither and fall off. Yes, it will grow new ones, and you will need to tie it up until the new ones appear.
